Golden Turmeric Kitchari

A healing Ayurvedic one-pot meal of rice and mung dal infused with turmeric, cumin, and ghee. The ultimate sattvic comfort food.

Rinse the rice and mung dal together until the water runs clear. Soak for 15 minutes if time allows.

Heat ghee in a heavy-bottomed pot over medium heat. Add cumin seeds and let them splutter.

Add turmeric powder, coriander powder, and grated ginger. Stir for 30 seconds until fragrant.

Add the drained rice and dal. Stir to coat with the spices for 1 minute.

Pour in 4 cups of water and add salt. Bring to a boil.

Reduce heat to low, cover, and simmer for 25-30 minutes until the rice and dal are soft and porridge-like.

Garnish with fresh cilantro and a drizzle of ghee. Serve warm.
